German Pancakes

We've kind of tweeked these, so I don't know how traditional they are. But, they are yummy! All of our kids favorite.

German Pancakes

1 C. milk
7 eggs
1 t. vanilla
1/2 t. salt
Beat with a wisk then beat in
1 C. flour

Preheat oven 425 for metal 400 for glass pan. Melt 1 stick of butter in a large pan (we use the big metal one Mom gave us) 9x13 or larger is good. Add your pancake batter on top, it will be very runny. Wayne likes to sprinkle with cinnamon before baking. Make sure you have plenty of room between oven racks for it to grow , (4 or 5 inches) bake until brown approx. 15 min.

Happy Birthday Jared!

Jared had a Batman birthday party with a few of his friends.  He chose hotdogs, Cheetos, and fruit snacks to serve.  They had fun playing with his Batcave and some of the toys he got for his birthday.


This is Jared's Batman cake just the way he wanted it- with blood on the inside (red velvet cake).


For his birthday dinner he wanted chicken nuggets and french fries.  
Jared is a good boy.  We love him very much and had a great time giving him his way on his birthday!  It was a fun day!  Happy Birthday Bare-bear!

Chandler's Purple Belt

Chandler tested last Wednesday for his purple belt in Taekwon Do.

This is the group that tested that night.

He passed his test, and received his purple belt on Monday.

He was pretty excited about it!

Wayne's Birthday

Happy Birthday!


Wayne spent the day hanging out at home with the kids, playing games.  For dinner he had ribs and shrimp.  Then played some more games!

Wayne has been loving Bananagrams.  This is one of his birthday presents.

It was date cake as usual this year!

We love you Wayne!  Happy 33rd!

Happy Birthday Debbie!

Buddy Crocker AKA Wayne made these cupcakes for Debbie!

We were impressed she blew out the candles in one breath (at her age and all). But, her mind is going and she DID forget to make a wish! Just teasing you Deb. We love ya!

Debbie had thai food for her birthday lunch. For dinner, she went to Wayne and Melissa's for some tri-tip & these cupcakes. After dinner, she played a couple good games of Uno Attack and Bananagrams. She also received some much needed food storage shelves as a gift. We hope you had a good one Deb! We love you, and are grateful for everything you do for everyone!

Guacamole Auténtico

Chuck found and made this recipe the other day and served it with corn chips warmed in the oven... olé!

GUACAMOLE AUTÉNTICO


Here's the real deal: a guacamole recipe so authentic, you can almost hear the Mariachis singing.



Ingredients

4 ripe, Fresh California Avocados, peeled and seeded

1/2 tsp. ground cumin

1 ripe, medium Roma tomato, seeded, diced

1/2 cup minced sweet white onion

2 serrano chilies, seeded and minced

1/2 cup cilantro leaves, chopped

4 Tbsp. fresh lime juice

Hot pepper sauce

Sea salt, to taste

White pepper, to taste


Instructions

1. Cut avocado in large chunks and mash coarsely in large bowl with a fork.

2. Add remaining ingredients and blend gently; leaving some small chunks is fine.

3. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired.


*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Mud Pie

Grandma Christensen got this recipe from Tiffany and made it for the Evans family for Christmas - it was quite a hit! She had Mom email me the recipe right after Christmas and I just barely realized that I still hadn't added it to the blog yet... sorry! Grandma, we're so glad you were able to make it down from NewCastle to share Christmas AND this dessert with us.
We LOVE you!!


Mud Pie:

First Layer

1 pkg oreos crushed (aboutt 3 C.)

6 T. sugar

1 cube melted butter

Mix together and press into bottom of 9 x 13 pan


Second Layer

1 pkg (8 oz) cream cheese, softened

1 C. powdered sugar

1 heaping C. cool whip

Mix together and spread on oreo layer


Third Layer

1 large pkg chocolate instant Jello pudding mix

1 large pkg vanilla instant Jello pudding mix

5 C. milk

Whisk together, pour on cream cheese layer


Fourth Layer - Cool Whip


(Tiffany had written 6 oz. pkg of cream cheese and I am assuming it means 8 oz. However, the second layer was quite stiff and hard to spread on the cookie layer - it might need less cream cheese or more Cool Whip).
